I've often wondered why that particular market prefers a smooth finish rather than the partial to well used look that 'we' prefer

It is one of the earlier characterless RWs. In spite of the 1942 Crown zip the seller would be luck to get $750 for it.

Would this develop some grain over time like a real A2?

A little perhaps, but the horsehide is not as initially grainy as the current Warhorse hide and will never look like a WW2 A2 IMO.
