How do I match the color of these panels on my B-3 reproduction?

I sent this jack to Arrow Fabricare to be restored at the advice of Schott and I can't understand why they left the two biggest panels untreated. The rest of the jacket is great.

At this point, I kind of just want to fix it myself since it's getting cold and it takes them a long time to get stuff done. Is there a product I could apply to finish the sheepskin? Or am I mistaken and is this how it should look?
